Recipe: Peanut Butter Pumpkins

I think this should be filed under “I’m not crafty – at all”.  I love the idea of making fancy cookies, decorating cakes, and DIYing things in my home, but let’s face it.  I’m not crafty.  I’m never going to be.  So why do I keep trying?

Because sometimes things are just so stinking cute you have to try.  Take these cookies for example.  I’ve had the recipe for probably two years, but I’ve never made them despite being ridiculously easy.  But they require me to cut things and score things and make them cute, and that made me worried.  But I really wanted to make them and at least try to be crafty so I made them.

Honestly the first batch reminded me a little of the cookie monster cupcake fail.  The cookies didn’t look at all like pumpkins, the stems had fallen out, and they were a little flat.  The second batch was better, but the third batch yielded enough okay-looking cookies to get a decent picture.

What do you think?  Did I do okay?

Peanut Butter Pumpkins

1 roll of refrigerated peanut butter cookie dough*
1 egg yolk
1/2 cup flour
1/3 cup orange sugar crystals**
14 twisted pretzel sticks, broken in half

Preheat the oven to 350°.  Grease baking sheets or line with parchement.  Pour the sugar crystals into a small bowl.

Mix the cookie dough, egg yolk, and flour together.  I used my hands for the last bit to make sure everything was well combined.   Roll the dough into 24 to 28 one inch-sized balls.  Roll each ball into the orange sprinkles.

Place the dough balls two inches apart on the baking sheets.  Insert the pretzel pieces into the tops (pressing down firmly so they’ll stay in during the baking).  Use a the tip of a teaspoon to make lines around the sides of the cookies to look like pumpkin ridges.

Bake for 9-11 minutes or until they are just set in the center.  Cool on the baking sheet for 2 minutes, then transfer to wire racks to cool completely.

*I really do recommend using refrigerated dough because I’m not sure how well your homemade dough would do with the extra flour and egg yolk.  Toss it up to Halloween and the need for decorated cookies and just use the store bought stuff.

**I couldn’t find the orange decorated sugar crystals so I used plain sugar that I dyed orange.  You’ll only need about 1/4 of a cup of plain sugar and I suggest rolling the balls in the sugar twice to get a more coated look.
