I know there are many of us out there who love to spend hours in the kitchen mixing, kneading, rolling, icing, and packaging our holiday treats for friends and families. But I also know there are just as many who love to make and give delicious treats out during the holidays, but just don’t have the hours it can take.
Enter this cookie.
I don’t know if I’ve ever had a cookie come together this quickly. You can make a batch of these, start to finish, in under 45 minutes. This is the perfect cookie to add to a cookie platter, to take to work, to share with neighbors, really it’s just a great cookie all around. I got about 20 cookies out of this recipe, so you can double it and easily feed a crowd. I also think you could add nuts or dip half of these in melted chocolate to change it up a little.
Chocolate Chip-Oatmeal Shortbread Cookies

1/2 cup (1 stick) butter, softened
1/2 cup powdered sugar
3/4 cup flour
1/4 teaspoon baking soda
1 teaspoon vanilla
1/2 cup quick-cooking oats
6 oz (half a bag) mini chocolate chips
Preheat oven to 325°. Line baking sheets with parchment or lightly grease.
Cream butter and sugar together until light and fluffy, about 2 minutes. Stir in flour, baking soda, vanilla, and oats. Mix in chocolate chips.
Drop by teaspoonfuls on the prepared sheets. Bake for 12-14 minutes or until lightly browned. Cool 1 minute on the sheets, and then move to wire racks to cool completely.
